If you wanted to you could skin and de-seed the tomatoes and just use the flesh which makes the texture of the salsa smoother. Mix all the ingredients together and serve with fish dishes, with nachos or chilli con carne. The sugar and salt help to bring out the juicy sweetness of the tomatoes and essentuates the flavour.

Tomato Salsa
Ingredients:
6 ripe tomatoes finely chopped
1 red onion finely chopped
1 - 2 red chillies, de-seeded and finely chopped
handful of chopped coriander
1 red pepper de-seeded and finely chopped
1 tsp castor sugar
juice of 1 lime
salt & pepper
