Olive, Basil & Balsamic
Ingredients:
1/2 clove garlic grated
handful of basil leaves chopped
handful of good quality, stoned black olives chopped
6 tbsp extra virgin olive oil
3 tbsp good quality balsamic vinegar
freshly ground salt & pepper to taste
Bash everything up together in a pestle and mortar. It’s very tasty over salads but I also use this with cous cous, and as a marinade over vegetable kebabs for barbecuing or grilling, using courgettes, aubergine, onions, tomatoes and peppers.
Lemon & Pepper
Ingredients:
juice of 1 lemon
3 tbsp creme fraiche or mayonaise
3 tbsp olive oil
1 tsp freshly ground pepper
1 tsp Dijon mustard
salt to taste
Mix all the ingredients together and serve drizzled over chicken, salad or fish.
Honey Mustard
Ingredients:
1 tsp clear honey
1 tsp wholegrain mustard
2 tbsp olive oil
1 tbsp lemon juice
salt to taste
Whisk or shake all the ingredients together and serve on salad, fish, pork or chicken. Try adding a tablespoon of Worcester sauce to this as well, it’s delicious!
